Knives

A common knife is consists of elongated steel part (so called blade) that is connected to the handle. The main purpose we use knives is cutting and slicing. Combat knives are also used for stabbing. Most of the blades must be sharpened to keep their edges sharp. You will also find whetstones in our e-shop. If you do not know how to sharpen a knife with a whetstone, please read this article. The harder the steel is, the easier is its sharpening and the longer will the blade edge remain sharp. Hardness of high quality chef knives should be 52 to 56 HRC.

The first knives were already made during the Old Stone Age. In the beginning they were only sharp stones. Wooden or bone handles were attached to these primitive blades later on. When men learned how to produce and process metals, knives in the modern sense of the word came into existence. Copper and bronze were the first metals to be used this way. Iron steel started to be used in the Iron Age. First steel knives were created in this time. All knife blades intended to get in contact with food have to be made from stainless steel according to health regulations of the EU. Manual production has been replaced by mass production. People want to have cheap and quality knives. Knives had to be produced in an automated way and in bulk. Production of quality stainless steel is more expensive, but still affordable.
